Sweet Sushi

I have found a total love for cooking. Can I always afford to cook what I want? No. Do I have time to cook what I want. No. Can I still dream about cooking what I want? Yes. And while the first foodie below has zero nutritional value that can be seen, how FUN would it be to make for the kiddos! The Fruit version, however, could serve as nice little summer treats!





Sweet Sushi:


Use Coconut milk with the water to make the sushi rice, usually 1/2 to 1/2 to 1. Meaning, 1/2 cup of water 1/2 cup of coconut milk & 1 cup of sushi rice.


Cook the rice like you would cook it for sushi. Instead of adding vinegar, add coco, Lopez coconut cream, a little cinnamon and a pinch of nutmeg... not too much.


For the wrapper use a little cocoa in a crepe batter to make chocolate crepe. That serves as the nori wrap. (OR.. an even less healthy alternative... Fruit by the foot. Poisoned by sugar!)


For the fillings you can reconstitute some figs, dried cranberries etc. For the wasabi, grind pistachios very finely until the are like peanut butter.

I believe they used Rice Crispy Treats, Kiwi, Strawberries, chocolate sprinkles, grapes, watermelon slices (squared) etc. BRILLIANT for a summer treat.

Mommy Dearest

I posted the following on my facebook with amazing response. So what better way to begin my Blog than with a topic that really matters to me?!




Ok Ladies. Being a wife and mom is HARD. i don't think anyone would disagree! And going from a 1 bedroom apartment to a 3 bedroom house and from one child (content with mac n cheese or pasta variations nearly every night) to three children in house has FINALLY set in. The fog of my first trimester has lifted, leaving me with a very clear image of "OH WHAT ON EARTH."
I have started my spring cleaning early. And I am trying to cook all meals at home. This is made harder by my 6 year old, Jordan, who refuses most food. Including bread. No joke, He will not eat bread, toast, a sandwich, etc.
So here is my charge, my request, my BEGGING PLEA! :) What are your tips for#1 keeping your house spit spot shiny#2 figuring out the basic necessities of weekly groceries#3 preparing to cook for the week#4 keeping your sanity.
I know, it seems so easy. But that is, of course, in theory.

We have been imortalized into action figures...
